Koki Egusi (cornmeal Fufu With Egusi Soup)
Koki Egusi is a traditional Cameroonian dish that consists of cornmeal fufu served with egusi soup. This hearty and flavorful meal is a staple in Cameroonian cuisine and is perfect for a comforting and satisfying dinner.
Ingredients
- 2 cups cornmeal
- 1 cup egusi (ground melon seeds)
- 1 onion, chopped
- 3 tomatoes, chopped
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- 1 cup spinach, chopped
- 1/2 cup palm oil
- 1 cup cooked meat or fish (optional)
- Salt to taste
Instructions
- In a large bowl, mix the cornmeal with water to form a smooth, thick paste. Shape the paste into small balls and set aside.
- In a pot, combine the egusi, onions, tomatoes, bell pepper, and scotch bonnet pepper. Add water and cook over medium heat for 30 minutes, stirring occasionally.
- Add the palm oil, spinach, and cooked meat or fish to the pot. Season with salt and continue cooking for an additional 15 minutes.
- While the egusi soup is cooking, bring a pot of water to a boil. Add the cornmeal balls and cook for 10-15 minutes until they float to the surface.
- Serve the cornmeal fufu with the hot egusi soup and enjoy!
