Koki Egusi (cornmeal Fufu With Egusi Soup)

Ingredients

  • 2 cups cornmeal
  • 1 cup egusi (ground melon seeds)
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, chopped
  • 1 cup spinach, chopped
  • 1/2 cup palm oil
  • 1 cup cooked meat or fish (optional)
  • Salt to taste

Instructions

  1. In a large bowl, mix the cornmeal with water to form a smooth, thick paste. Shape the paste into small balls and set aside.
  2. In a pot, combine the egusi, onions, tomatoes, bell pepper, and scotch bonnet pepper. Add water and cook over medium heat for 30 minutes, stirring occasionally.
  3. Add the palm oil, spinach, and cooked meat or fish to the pot. Season with salt and continue cooking for an additional 15 minutes.
  4. While the egusi soup is cooking, bring a pot of water to a boil. Add the cornmeal balls and cook for 10-15 minutes until they float to the surface.
  5. Serve the cornmeal fufu with the hot egusi soup and enjoy!
