Koki Pap (cornmeal Porridge)

Ingredients

  • 2 cups cornmeal
  • 1 cup spinach, chopped
  • 1 onion, finely chopped
  • 1/2 cup palm oil
  • 2 cups water
  • Salt to taste

Instructions

  1. In a large bowl, mix the cornmeal with water to form a smooth paste.
  2. Add the chopped spinach, onion, and palm oil to the cornmeal mixture and stir well.
  3. Pour the mixture into a pot and add water. Cook over medium heat, stirring constantly, until the porridge thickens.
  4. Season with salt to taste and continue cooking for another 10 minutes.
  5. Once the porridge is thick and fully cooked, remove from heat and let it cool slightly before serving.
