Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 bell peppers, chopped
- 3 cups chicken broth
- 1 cup peanut butter
- 1 cup spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the onions, tomatoes, carrots, and bell peppers to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes.
