Kokoda is a traditional dish from the Solomon Islands, made with fresh tuna marinated in coconut cream and lime juice, with a kick of spicy chili. It's a refreshing and flavorful salad that is perfect for a hot day.
Ingredients
- 1 lb fresh tuna, diced
- 1 cup coconut cream
- 2 tomatoes, diced
- 1 onion, finely chopped
- 2-3 chili peppers, finely chopped
- 1 cucumber, diced
- 1/2 cup lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced tuna, coconut cream, lime juice, and chopped chili peppers. Mix well and let it marinate in the refrigerator for at least 30 minutes.
- After marinating, add the diced tomatoes, onion, and cucumber to the tuna mixture. Season with salt and pepper, and gently toss to combine.
- Divide the salad into serving bowls and garnish with extra chili peppers if desired. Serve chilled.
