Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, paprika, salt, and black pepper, coating the chicken evenly with the spices.
- Pour in the coconut milk and bring the mixture to a simmer. Cover the pot and let it cook for 30 minutes, stirring occasionally.
- Serve the coconut curry chicken over cooked rice and enjoy!
