Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Add the chicken pieces to the pot and cook until browned on all sides.
  4. Stir in the curry powder, turmeric, cumin, coriander, paprika, salt, and black pepper, coating the chicken evenly with the spices.
  5. Pour in the coconut milk and bring the mixture to a simmer. Cover the pot and let it cook for 30 minutes, stirring occasionally.
  6. Serve the coconut curry chicken over cooked rice and enjoy!
