Ingredients

  • 4 fillets of fresh fish (such as snapper or mahi-mahi)
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1 cup coconut milk
  • Vegetable oil for frying
  • 4 large yams, peeled and cut into thick fries

Instructions

  1. In a bowl, mix the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.
  2. In another bowl, whisk the eggs and coconut milk together.
  3. Dip each fish fillet into the flour mixture, then into the egg mixture, and back into the flour mixture to coat evenly.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the coated fish fillets until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
  5. In the same oil, fry the yam fries until golden and crispy, about 5-7 minutes. Drain on paper towels and sprinkle with salt.
  6. Serve the crispy fish and yam fries hot, with a side of tartar sauce or aioli.
