Ingredients
- 4 fillets of fresh fish (such as snapper or mahi-mahi)
- 2 cups all-purpose flour
- 1 cup cornstarch
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 cup coconut milk
- Vegetable oil for frying
- 4 large yams, peeled and cut into thick fries
Instructions
- In a bowl, mix the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.
- In another bowl, whisk the eggs and coconut milk together.
- Dip each fish fillet into the flour mixture, then into the egg mixture, and back into the flour mixture to coat evenly.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the coated fish fillets until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
- In the same oil, fry the yam fries until golden and crispy, about 5-7 minutes. Drain on paper towels and sprinkle with salt.
- Serve the crispy fish and yam fries hot, with a side of tartar sauce or aioli.
