Kokorako (pineapple Prawn Paradise)

Ingredients
- 1 pound prawns, peeled and deveined
- 1 small pineapple, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ginger, grated
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix soy sauce, honey, ginger, and cornstarch. Set aside.
- Heat vegetable oil in a large pan over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.
- Add prawns to the pan and cook until they turn pink and opaque.
- Add pineapple to the pan and cook for 2-3 minutes.
- Pour the soy sauce mixture over the prawns and pineapple. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the Kokorako hot with steamed rice or on its own.
