Ingredients

  • 1 pound prawns, peeled and deveined
  • 1 small pineapple, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix soy sauce, honey, ginger, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add onion, garlic, and red bell pepper. Cook until softened.
  3. Add prawns to the pan and cook until they turn pink and opaque.
  4. Add pineapple to the pan and cook for 2-3 minutes.
  5. Pour the soy sauce mixture over the prawns and pineapple. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve the Kokorako hot with steamed rice or on its own.
