Kokos Kip (surinamese Coconut Chicken)
Kokos Kip, also known as Surinamese Coconut Chicken, is a flavorful and aromatic dish that originates from the diverse cuisine of Suriname. This dish combines tender chicken with rich coconut milk and a blend of aromatic spices, creating a delicious and comforting meal.
Ingredients
- 1.5 lbs chicken thighs, bone-in and skin-on
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1 can (14 oz) coconut milk
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir to combine with the spices and onions. Return the chicken thighs to the pot, nestling them into the coconut milk mixture.
- Bring the coconut milk to a simmer, then reduce the heat to low. Cover the pot and let the chicken simmer for 30-35 minutes, or until the chicken is cooked through and tender.
- Once the chicken is cooked, remove it from the pot and set aside. Increase the heat to medium-high and let the coconut milk sauce simmer and reduce for 5-10 minutes, until slightly thickened.
- Return the chicken to the pot and coat it with the thickened coconut milk sauce. Serve the Kokos Kip hot, garnished with fresh cilantro if desired.
