Kolacky
Kolacky is a traditional Czech pastry that is popular in many Eastern European countries. These delicious pastries are filled with a variety of sweet fillings and are perfect for enjoying with a cup of coffee or tea.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- Fruit preserves or pie filling of your choice
Instructions
- In a large bowl, cream together the butter, cream cheese, and sugar until smooth.
- Stir in the vanilla extract, then gradually mix in the flour until a soft dough forms.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the dough on a floured surface and cut into small squares.
- Place a small amount of fruit preserves or pie filling in the center of each square.
- Bring the opposite corners of each square together and pinch to seal.
- Place the filled pastries on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
- Allow the kolacky to cool before serving.
