Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • Fruit preserves or pie filling of your choice

Instructions

  1. In a large bowl, cream together the butter, cream cheese, and sugar until smooth.
  2. Stir in the vanilla extract, then gradually mix in the flour until a soft dough forms.
  3. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Roll out the dough on a floured surface and cut into small squares.
  5. Place a small amount of fruit preserves or pie filling in the center of each square.
  6. Bring the opposite corners of each square together and pinch to seal.
  7. Place the filled pastries on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  8. Allow the kolacky to cool before serving.
