Kolar Pitha (stuffed Squash)
Kolar Pitha is a traditional Tripuri dish made with stuffed squash. This delicious recipe is a popular delicacy in Tripuri cuisine and is perfect for a hearty and flavorful meal.
Ingredients
- 4 small squashes
- 1 cup grated coconut
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Wash the squashes and cut off the tops. Scoop out the seeds and flesh to create a hollow cavity.
- In a bowl, mix the grated coconut, chopped onion, green chilies, ginger paste, turmeric powder, and salt.
- Stuff the squash with the coconut mixture and replace the tops.
- Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, place the stuffed squashes in the pan.
- Cover and cook on low heat for 20-25 minutes, turning the squashes occasionally until they are tender.
- Remove from heat and serve hot.
