Kolar Pitha (stuffed Squash)

Ingredients

  • 4 small squashes
  • 1 cup grated coconut
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Wash the squashes and cut off the tops. Scoop out the seeds and flesh to create a hollow cavity.
  2. In a bowl, mix the grated coconut, chopped onion, green chilies, ginger paste, turmeric powder, and salt.
  3. Stuff the squash with the coconut mixture and replace the tops.
  4. Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, place the stuffed squashes in the pan.
  5. Cover and cook on low heat for 20-25 minutes, turning the squashes occasionally until they are tender.
  6. Remove from heat and serve hot.
