Kolhapuri Chicken (कोल्हापुरी चिकन)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 1/2 cup grated coconut
  • 4-5 dry red chilies
  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1-inch ginger, grated
  • 4-5 garlic cloves
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the chopped onions until golden brown.
  2. Add grated coconut, dry red chilies, coriander seeds, cumin seeds, ginger, and garlic to the pan. Sauté until the mixture turns golden.
  3. Cool the mixture and grind it to a smooth paste.
  4. Heat oil in a deep pan, add the ground paste, turmeric powder, and garam masala. Cook for 5 minutes.
  5. Add the chicken pieces and salt. Mix well and cook covered for 30-35 minutes or until the chicken is tender.
  6. Garnish with fresh coriander leaves and serve hot.
