Kolhapuri Chicken (कोल्हापुरी चिकन)
कोल्हापुरी चिकन (Kolhapuri Chicken) is a spicy and flavorful chicken dish from the Maharashtrian cuisine, known for its rich and aromatic gravy.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 1/2 cup grated coconut
- 4-5 dry red chilies
- 1 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1-inch ginger, grated
- 4-5 garlic cloves
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add grated coconut, dry red chilies, coriander seeds, cumin seeds, ginger, and garlic to the pan. Sauté until the mixture turns golden.
- Cool the mixture and grind it to a smooth paste.
- Heat oil in a deep pan, add the ground paste, turmeric powder, and garam masala. Cook for 5 minutes.
- Add the chicken pieces and salt. Mix well and cook covered for 30-35 minutes or until the chicken is tender.
- Garnish with fresh coriander leaves and serve hot.
