Koli Pulav (coorgi Style Mutton Biryani)

Koli Pulav, also known as Coorgi Style Mutton Biryani, is a traditional dish from the Kodava Cuisine of Coorg, Karnataka. This aromatic and flavorful biryani is made with tender mutton pieces and fragrant spices, creating a mouthwatering dish that is perfect for special occasions and gatherings.

Koli Pulav (coorgi Style Mutton Biryani)

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 2 tbsp ginger-garlic paste
  • Whole spices: cinnamon, cardamom, cloves, bay leaves
  • 1/2 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tsp garam masala
  • 1/2 cup ghee
  • Salt to taste
  • 4 cups water

Instructions

  1. Marinate the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for 1 hour.
  2. Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Add the marinated mutton and cook until the meat is browned.
  5. Stir in the chopped tomatoes, green chilies, mint leaves, and coriander leaves. Cook for 5 minutes.
  6. Wash the basmati rice and add it to the pot. Mix well with the mutton and spices.
  7. Pour in the water, add garam masala, and adjust the salt. Bring to a boil.
  8. Cover the pot and cook on low heat until the mutton and rice are tender, about 30-40 minutes.
  9. Once done, fluff the biryani with a fork and serve hot.
