Koli Roast (coorgi Style Mutton Roast)
Koli Roast, also known as Coorgi Style Mutton Roast, is a traditional dish from the Kodava Cuisine of Karnataka, India. This flavorful and aromatic dish is a perfect blend of spices and tender mutton, making it a popular choice for special occasions and gatherings.
Ingredients
- 500g mutton, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 tablespoons Coorgi masala powder
- 2 green chilies, slit
- 1 sprig curry leaves
- Salt to taste
- 2 tablespoons oil
- 1 cup water
Instructions
- Heat oil in a pan and sauté the chopped onions until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Next, add the mutton pieces and cook until they are browned on all sides.
- Stir in the tomato puree, turmeric powder, Coorgi masala powder, green chilies, curry leaves, and salt. Cook for 5 minutes.
- Pour in the water, cover the pan, and simmer for 45-50 minutes or until the mutton is tender.
- Once the mutton is cooked, remove the lid and cook on high heat until the gravy thickens and the oil separates.
- Serve the Koli Roast hot with steamed rice or roti.
