Koli Roast (coorgi Style Mutton Roast)

Ingredients

  • 500g mutton, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 tablespoons Coorgi masala powder
  • 2 green chilies, slit
  • 1 sprig curry leaves
  • Salt to taste
  • 2 tablespoons oil
  • 1 cup water

Instructions

  1. Heat oil in a pan and sauté the chopped onions until golden brown.
  2. Add the ginger-garlic paste and sauté for a minute.
  3. Next, add the mutton pieces and cook until they are browned on all sides.
  4. Stir in the tomato puree, turmeric powder, Coorgi masala powder, green chilies, curry leaves, and salt. Cook for 5 minutes.
  5. Pour in the water, cover the pan, and simmer for 45-50 minutes or until the mutton is tender.
  6. Once the mutton is cooked, remove the lid and cook on high heat until the gravy thickens and the oil separates.
  7. Serve the Koli Roast hot with steamed rice or roti.
