Kolokasi Craze is a traditional Cypriot dish that features the delicious taro root, known as kolokasi in Cyprus. This recipe combines the earthy flavors of kolokasi with a savory tomato-based sauce, creating a hearty and satisfying meal.
Ingredients
- 1 kg kolokasi (taro root), peeled and cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 400g canned tomatoes
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 3 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the kolokasi chunks to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the canned tomatoes, oregano, cinnamon, salt, and pepper. Stir to combine.
- Cover the pot and simmer for 20-25 minutes, or until the kolokasi is tender.
- Adjust seasoning if needed, then serve hot.
