Kolokasi Craze

Ingredients

  • 1 kg kolokasi (taro root), peeled and cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 400g canned tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until softened.
  3. Add the kolokasi chunks to the pot and cook for 5 minutes, stirring occasionally.
  4. Pour in the canned tomatoes, oregano, cinnamon, salt, and pepper. Stir to combine.
  5. Cover the pot and simmer for 20-25 minutes, or until the kolokasi is tender.
  6. Adjust seasoning if needed, then serve hot.
