Kombdi Rassa (कोंबडी रस्सा)
कोंबडी रस्सा (Kombdi Rassa) is a traditional Maharashtrian chicken curry that is known for its rich and spicy flavors. This dish is a staple in Maharashtrian cuisine and is often served with bhakri or steamed rice.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 1/2 cup grated coconut
- 2 tomatoes, pureed
- 4-5 garlic cloves
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp turmeric powder
- 2-3 tbsp red chili powder
- 2-3 tbsp oil
- Fresh coriander leaves for garnish
- Salt to taste
Instructions
- Heat oil in a pan and add cumin seeds and coriander seeds. Sauté until they crackle.
- Add chopped onions, garlic, and ginger. Cook until the onions turn golden brown.
- Add the chicken pieces and cook until they are slightly browned.
- Next, add the tomato puree, turmeric powder, red chili powder, and salt. Mix well and cook for 5-7 minutes.
- Add grated coconut and water. Cover and cook until the chicken is tender.
- Garnish with fresh coriander leaves and serve hot with bhakri or steamed rice.
