Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups rice flour
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cup grated coconut
  • 1/4 cup cilantro, chopped
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 tsp cumin seeds
  • 1/4 tsp asafoetida (hing)
  • Salt to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the rice flour with water to form a smooth dough. Divide the dough into small balls and flatten them into puri shapes. Deep fry the puris until they are golden and crispy. Set aside.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until they turn golden brown.
  3. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
  4. Add the chicken pieces and cook until they are browned on all sides.
  5. Pour in water, cover the pan, and let the chicken cook until tender.
  6. Add garam masala, grated coconut, and cilantro. Cook for another 5 minutes.
  7. Serve the hot chicken curry with the crispy rice flour puris.
