Kombdi Vade (कोंबडी वडे)
Kombdi Vade is a traditional Maharashtrian dish that consists of chicken curry served with a crispy and fluffy rice flour puri. It is a popular dish in the rural areas of Maharashtra and is often prepared during special occasions and festivals.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups rice flour
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 cup grated coconut
- 1/4 cup cilantro, chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp cumin seeds
- 1/4 tsp asafoetida (hing)
- Salt to taste
- Oil for frying
Instructions
- In a bowl, mix the rice flour with water to form a smooth dough. Divide the dough into small balls and flatten them into puri shapes. Deep fry the puris until they are golden and crispy. Set aside.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until they turn golden brown.
- Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add the chicken pieces and cook until they are browned on all sides.
- Pour in water, cover the pan, and let the chicken cook until tender.
- Add garam masala, grated coconut, and cilantro. Cook for another 5 minutes.
- Serve the hot chicken curry with the crispy rice flour puris.
