Konijn in Geuze, or Belgian Beer-Braised Rabbit, is a traditional dish from Northern European cuisine that combines the rich flavors of rabbit with the unique taste of Geuze, a type of Belgian beer.
Ingredients
- 1 whole rabbit, cut into pieces
- 2 tablespoons all-purpose flour
- 4 tablespoons unsalted butter
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 cups Geuze beer
- 2 cups chicken broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a bowl, coat the rabbit pieces with flour, salt, and pepper.
- In a large Dutch oven, melt the butter over medium heat. Add the rabbit pieces and brown on all sides. Remove the rabbit and set aside.
- Add the onions and garlic to the Dutch oven and cook until softened.
- Pour in the Geuze beer and chicken broth, then return the rabbit to the pot. Add the bay leaves.
- Bring the liquid to a simmer, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the rabbit is tender.
- Once done, remove the bay leaves and serve the rabbit with the braising liquid.
