Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 tablespoons all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 cups Geuze beer
  • 2 cups chicken broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a bowl, coat the rabbit pieces with flour, salt, and pepper.
  2. In a large Dutch oven, melt the butter over medium heat. Add the rabbit pieces and brown on all sides. Remove the rabbit and set aside.
  3. Add the onions and garlic to the Dutch oven and cook until softened.
  4. Pour in the Geuze beer and chicken broth, then return the rabbit to the pot. Add the bay leaves.
  5. Bring the liquid to a simmer, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the rabbit is tender.
  6. Once done, remove the bay leaves and serve the rabbit with the braising liquid.
