Ingredients

  • 2 cups chopped cocoyam leaves (kontomire)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 cup cooked black-eyed peas
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • Salt to taste
  • 2 tablespoons palm oil

Instructions

  1. Heat the palm oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the diced tomatoes and cook until softened.
  4. Stir in the cocoyam leaves and cooked black-eyed peas.
  5. Season with red pepper flakes, ground ginger, ground nutmeg, and salt.
  6. Cover the pot and let the kontomire simmer for 15-20 minutes, stirring occasionally.
  7. Once the leaves are tender, remove from heat and serve hot.
