Ingredients

  • 1 pound ground beef
  • 1/2 cup cooked rice
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup vegetable oil
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 cups beef or vegetable broth

Instructions

  1. In a large bowl, combine the ground beef, cooked rice, grated onion, garlic, parsley, mint, cumin, cinnamon, salt, and pepper. Mix well to combine.
  2. Form the mixture into large meatballs, about the size of a tennis ball.
  3. In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and cook until golden brown.
  4. Add the chopped tomatoes to the pot and cook for a few minutes until they start to break down.
  5. Carefully place the meatballs into the pot, then pour the broth over them. Bring to a simmer, then cover and cook for 30-40 minutes, or until the meatballs are cooked through.
  6. Serve the koofteh hot, with the tomato-based sauce spooned over the top.
