Ingredients
- 1 pound ground beef
- 1/2 cup cooked rice
- 1 onion, grated
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup vegetable oil
- 1 onion, sliced
- 2 tomatoes, chopped
- 2 cups beef or vegetable broth
Instructions
- In a large bowl, combine the ground beef, cooked rice, grated onion, garlic, parsley, mint, cumin, cinnamon, salt, and pepper. Mix well to combine.
- Form the mixture into large meatballs, about the size of a tennis ball.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and cook until golden brown.
- Add the chopped tomatoes to the pot and cook for a few minutes until they start to break down.
- Carefully place the meatballs into the pot, then pour the broth over them. Bring to a simmer, then cover and cook for 30-40 minutes, or until the meatballs are cooked through.
- Serve the koofteh hot, with the tomato-based sauce spooned over the top.
