Kookose Karrikrevetid (coconut Curry Shrimp)

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the curry powder, turmeric, cumin, paprika, salt, and black pepper to the pan, and stir to combine with the onion and garlic.
  4. Pour in the coconut milk and stir well to combine with the spices.
  5. Add the sliced red bell pepper to the pan and let the mixture simmer for 5 minutes.
  6. Add the shrimp to the pan and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
  7. Serve the coconut curry shrimp over cooked rice.
