Korean-inspired General Tso's Shrimp (조선식 제너럴 토스 새우)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon Korean red pepper flakes
  • 2 green onions, chopped

Instructions

  1. In a large bowl, toss the shrimp with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until golden and crispy, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the garlic and ginger. Cook for 1-2 minutes until fragrant.
  4. Stir in the soy sauce, rice vinegar, brown sugar, and Korean red pepper flakes. Cook for 2-3 minutes until the sauce thickens.
  5. Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for an additional 1-2 minutes.
  6. Garnish with chopped green onions and serve hot.
