Ingredients
- 1 pound medium shrimp, peeled and deveined
- 2 cups cooked white rice
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots, thawed
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
- 1/4 cup cornstarch
- Vegetable oil for frying
- Sesame seeds for garnish
Instructions
- In a small bowl, mix together soy sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and red pepper flakes to make the sauce. Set aside.
- In a separate bowl, coat the shrimp with cornstarch.
- Heat vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until crispy and golden brown. Remove the shrimp from the skillet and set aside.
- In the same skillet, add a little more oil if needed. Sauté the garlic, green onions, peas, and carrots until fragrant.
- Pour the beaten eggs into the skillet and scramble until cooked through.
- Add the cooked rice to the skillet and stir-fry for a few minutes.
- Pour the sauce over the rice and mix well to coat. Cook for an additional 2-3 minutes.
- Add the crispy shrimp back to the skillet and toss to combine with the rice.
- Transfer the fried rice to a serving dish and garnish with sesame seeds.
