Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 cups cooked white rice
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots, thawed
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup cornstarch
  • Vegetable oil for frying
  • Sesame seeds for garnish

Instructions

  1. In a small bowl, mix together soy sauce, hoisin sauce, rice vinegar, sugar, sesame oil, and red pepper flakes to make the sauce. Set aside.
  2. In a separate bowl, coat the shrimp with cornstarch.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook until crispy and golden brown. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add a little more oil if needed. Sauté the garlic, green onions, peas, and carrots until fragrant.
  5. Pour the beaten eggs into the skillet and scramble until cooked through.
  6. Add the cooked rice to the skillet and stir-fry for a few minutes.
  7. Pour the sauce over the rice and mix well to coat. Cook for an additional 2-3 minutes.
  8. Add the crispy shrimp back to the skillet and toss to combine with the rice.
  9. Transfer the fried rice to a serving dish and garnish with sesame seeds.
