Korean-inspired Sichuan Mapo Tofu (사천 마파두부)

Ingredients
- 1 block (14 oz) firm tofu, cubed
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 2 green onions, chopped
- 1/4 lb ground pork (optional for non-vegetarian version)
- 2 tbsp Sichuan doubanjiang (chili bean paste)
- 1 tbsp Sichuan peppercorns, toasted and ground
- 1 cup vegetable broth
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the garlic, ginger, and green onions, and cook for 1-2 minutes until fragrant.
- If using ground pork, add it to the wok and cook until browned.
- Stir in the doubanjiang and Sichuan peppercorns, and cook for another minute.
- Pour in the vegetable broth, soy sauce, and sugar. Bring to a simmer.
- Add the cubed tofu and gently stir to combine with the sauce.
- Simmer for 5-7 minutes to allow the flavors to meld.
- Stir in the sesame oil and the cornstarch slurry to thicken the sauce.
- Remove from heat and serve hot with steamed rice.
