Korean-inspired Sichuan Mapo Tofu (사천 마파두부)

Ingredients

  • 1 block (14 oz) firm tofu, cubed
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 green onions, chopped
  • 1/4 lb ground pork (optional for non-vegetarian version)
  • 2 tbsp Sichuan doubanjiang (chili bean paste)
  • 1 tbsp Sichuan peppercorns, toasted and ground
  • 1 cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the garlic, ginger, and green onions, and cook for 1-2 minutes until fragrant.
  3. If using ground pork, add it to the wok and cook until browned.
  4. Stir in the doubanjiang and Sichuan peppercorns, and cook for another minute.
  5. Pour in the vegetable broth, soy sauce, and sugar. Bring to a simmer.
  6. Add the cubed tofu and gently stir to combine with the sauce.
  7. Simmer for 5-7 minutes to allow the flavors to meld.
  8. Stir in the sesame oil and the cornstarch slurry to thicken the sauce.
  9. Remove from heat and serve hot with steamed rice.
