Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup honey
  • 2 tablespoons Korean red pepper paste (gochujang)
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, toss the chicken pieces with the cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until golden and crispy, about 5-6 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the garlic and ginger, and cook for 1-2 minutes until fragrant.
  4. Stir in the soy sauce, rice vinegar, honey, and gochujang. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
  6. Drizzle with sesame oil and garnish with sliced green onions and sesame seeds before serving.
