Korean-style Mapo Tofu (마파두부)

Ingredients

  • 1 block (14 oz) soft tofu, cut into cubes
  • 200g ground pork
  • 2 tbsp gochugaru (Korean red pepper flakes)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1-inch ginger, minced
  • 2 green onions, chopped
  • 1/2 cup chicken or vegetable broth
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a pan, brown the ground pork over medium heat.
  2. Add the garlic, ginger, and half of the green onions. Cook until fragrant.
  3. Stir in the gochugaru, soy sauce, and sesame oil.
  4. Pour in the broth and bring to a simmer.
  5. Gently add the tofu cubes and simmer for 5-7 minutes.
  6. Stir in the cornstarch mixture and cook until the sauce thickens.
  7. Sprinkle the remaining green onions on top and serve hot.
