Korean-style Mongolian Chicken (몽골리안 치킨)

Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 cup (120ml) soy sauce
  • 1/2 cup (120ml) water
  • 1/4 cup (60g) brown sugar
  • 2 tablespoons cornstarch
  • 2 green onions, chopped

Instructions

  1. In a small bowl, mix together soy sauce, water, brown sugar, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add a little more oil if needed. Sauté the garlic and ginger until fragrant.
  4. Pour the soy sauce mixture into the pan and stir until the sauce thickens.
  5. Return the cooked chicken to the pan and toss to coat with the sauce. Cook for an additional 2-3 minutes.
  6. Sprinkle with chopped green onions before serving.
