Korean-style Sweet and Sour Mushroom (탕수버섯)

Ingredients

  • 1 pound of fresh mushrooms, such as shiitake or button mushrooms
  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1/4 cup water
  • Sesame seeds and green onions for garnish

Instructions

  1. Rinse the mushrooms and pat them dry. Cut larger mushrooms into bite-sized pieces.
  2. Coat the mushrooms in cornstarch, shaking off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the coated mushrooms and cook until crispy and golden brown, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.
  4. In a small saucepan, combine the sugar, rice vinegar, ketchup, soy sauce, and water. Cook over medium heat, stirring constantly, until the sauce thickens and becomes glossy, about 5 minutes.
  5. Pour the sweet and sour sauce over the crispy mushrooms and toss to coat evenly.
  6. Garnish with sesame seeds and chopped green onions before serving.
