Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup pineapple chunks
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 1/4 cup ketchup
- 3 tablespoons rice vinegar
- 3 tablespoons sugar
- 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- Pat the shrimp dry with paper towels and season with salt and pepper.
- Dredge the shrimp in cornstarch, dip into the beaten eggs, and then coat again with cornstarch.
- Heat vegetable oil in a large pan over medium-high heat and fry the shrimp until golden and crispy. Drain on paper towels.
- In a separate pan, combine ketchup, rice vinegar, sugar, soy sauce, garlic, and ginger. Cook over medium heat until the sauce thickens.
- Add pineapple, bell pepper, and onion to the sauce, and cook for a few minutes until the vegetables are slightly softened.
- Add the fried shrimp to the sauce and toss to coat evenly.
- Serve the tangsu shrimp hot, garnished with sesame seeds and chopped green onions.
