Ingredients
- 1 block of firm tofu, cut into cubes
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onion
- 1/4 cup pineapple chunks
- 1/4 cup ketchup
- 3 tablespoons rice vinegar
- 3 tablespoons sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
Instructions
- Press the tofu cubes between paper towels to remove excess moisture.
- Coat the tofu cubes in cornstarch.
- Heat the vegetable oil in a pan and fry the tofu until golden and crispy. Set aside.
- In the same pan, sauté the bell peppers, onions, and pineapple chunks until slightly softened.
- In a bowl, mix together the ketchup, rice vinegar, sugar, and soy sauce to make the sauce.
- Pour the sauce into the pan with the vegetables and bring to a simmer.
- Add the cornstarch mixture to the pan and stir until the sauce thickens.
- Add the fried tofu to the pan and toss to coat with the sauce.
- Serve the sweet and sour tofu hot, garnished with green onions if desired.
