Korean-style Sweet and Sour Tofu (탕수두부)

Ingredients

  • 1 block of firm tofu, cut into cubes
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onion
  • 1/4 cup pineapple chunks
  • 1/4 cup ketchup
  • 3 tablespoons rice vinegar
  • 3 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Instructions

  1. Press the tofu cubes between paper towels to remove excess moisture.
  2. Coat the tofu cubes in cornstarch.
  3. Heat the vegetable oil in a pan and fry the tofu until golden and crispy. Set aside.
  4. In the same pan, sauté the bell peppers, onions, and pineapple chunks until slightly softened.
  5. In a bowl, mix together the ketchup, rice vinegar, sugar, and soy sauce to make the sauce.
  6. Pour the sauce into the pan with the vegetables and bring to a simmer.
  7. Add the cornstarch mixture to the pan and stir until the sauce thickens.
  8. Add the fried tofu to the pan and toss to coat with the sauce.
  9. Serve the sweet and sour tofu hot, garnished with green onions if desired.
