Kori Biryani (kundapur Chicken Biryani)

Kori Biryani, also known as Kundapur Chicken Biryani, is a flavorful and aromatic rice dish from the Dakshina Karnataka Cuisine. This biryani is packed with the rich and spicy flavors of the coastal region of Karnataka, making it a delightful and satisfying meal.

Kori Biryani (kundapur Chicken Biryani)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves
  • 4 green chilies, slit
  • 4 cups water
  • Salt to taste
  • 3 tbsp ghee (clarified butter)
  • Whole spices: 2 bay leaves, 4 cloves, 4 green cardamoms, 2-inch cinnamon stick

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, mint leaves, cilantro leaves, green chilies, and salt. Let it marinate for 30 minutes.
  3. In a large pot, heat ghee and add the whole spices. Sauté until fragrant.
  4. Add the sliced onions and sauté until golden brown.
  5. Add the marinated chicken and cook until the chicken is partially cooked.
  6. Add the chopped tomatoes and cook until they turn soft.
  7. Layer the soaked rice over the chicken mixture. Pour water and adjust salt. Cover and cook until the rice is done.
  8. Once the biryani is cooked, let it rest for 10 minutes before serving. Serve hot with raita and salad.
