Kori Biryani (kundapur Chicken Biryani)
Kori Biryani, also known as Kundapur Chicken Biryani, is a flavorful and aromatic rice dish from the Dakshina Karnataka Cuisine. This biryani is packed with the rich and spicy flavors of the coastal region of Karnataka, making it a delightful and satisfying meal.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup mint leaves
- 1/2 cup cilantro leaves
- 4 green chilies, slit
- 4 cups water
- Salt to taste
- 3 tbsp ghee (clarified butter)
- Whole spices: 2 bay leaves, 4 cloves, 4 green cardamoms, 2-inch cinnamon stick
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, mint leaves, cilantro leaves, green chilies, and salt. Let it marinate for 30 minutes.
- In a large pot, heat ghee and add the whole spices. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Add the marinated chicken and cook until the chicken is partially cooked.
- Add the chopped tomatoes and cook until they turn soft.
- Layer the soaked rice over the chicken mixture. Pour water and adjust salt. Cover and cook until the rice is done.
- Once the biryani is cooked, let it rest for 10 minutes before serving. Serve hot with raita and salad.
