Kori Nei Roast, also known as Kundapur Chicken Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a spicy and flavorful chicken roast that is cooked in ghee and a blend of aromatic spices.

Ingredients

  • 500g chicken, cut into pieces
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1 tbsp tamarind paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
  3. Now, add the chicken pieces and sauté until they are well coated with the onion mixture.
  4. Add red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for 10-15 minutes.
  5. Once the chicken is almost cooked, add the tamarind paste and cook for another 5 minutes.
  6. Garnish with fresh coriander leaves and serve hot.
