Kori Nei Roast (kundapur Chicken Ghee Roast)
Kori Nei Roast, also known as Kundapur Chicken Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a spicy and flavorful chicken roast that is cooked in ghee and a blend of aromatic spices.
Ingredients
- 500g chicken, cut into pieces
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1 tbsp tamarind paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
- Now, add the chicken pieces and sauté until they are well coated with the onion mixture.
- Add red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for 10-15 minutes.
- Once the chicken is almost cooked, add the tamarind paste and cook for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot.
