Kori Nei Roast (mangalorean Chicken Ghee Roast)
Kori Nei Roast, also known as Mangalorean Chicken Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a spicy and flavorful chicken dish that is cooked in ghee and a blend of aromatic spices.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 1/2 cup ghee
- 1/4 cup dry red chilies
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon peppercorns
- 1 teaspoon turmeric powder
- 1 tablespoon tamarind paste
- 4-5 garlic cloves
- 1 inch ginger
- Salt to taste
Instructions
- In a pan, dry roast the dry red chilies, coriander seeds, cumin seeds, and peppercorns until fragrant. Allow it to cool and then grind into a fine powder.
- Marinate the chicken pieces with turmeric powder, tamarind paste, and salt. Let it sit for 15-20 minutes.
- Heat ghee in a pan and add the finely chopped onions. Sauté until golden brown.
- Add the marinated chicken pieces and cook until the chicken is tender and the ghee separates from the masala.
- Add the ground spice powder and mix well. Cook for another 5-7 minutes.
- Serve hot with steamed rice or neer dosa.
