Kori Nei Roast, also known as Mangalorean Chicken Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a spicy and flavorful chicken dish that is cooked in ghee and a blend of aromatic spices.

Kori Nei Roast (mangalorean Chicken Ghee Roast)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 1/2 cup ghee
  • 1/4 cup dry red chilies
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon peppercorns
  • 1 teaspoon turmeric powder
  • 1 tablespoon tamarind paste
  • 4-5 garlic cloves
  • 1 inch ginger
  • Salt to taste

Instructions

  1. In a pan, dry roast the dry red chilies, coriander seeds, cumin seeds, and peppercorns until fragrant. Allow it to cool and then grind into a fine powder.
  2. Marinate the chicken pieces with turmeric powder, tamarind paste, and salt. Let it sit for 15-20 minutes.
  3. Heat ghee in a pan and add the finely chopped onions. Sauté until golden brown.
  4. Add the marinated chicken pieces and cook until the chicken is tender and the ghee separates from the masala.
  5. Add the ground spice powder and mix well. Cook for another 5-7 minutes.
  6. Serve hot with steamed rice or neer dosa.
