Kori Pulao (mangalorean Chicken Pulao)

Kori Pulao, also known as Mangalorean Chicken Pulao, is a flavorful and aromatic rice dish from the Dakshina Karnataka Cuisine. This dish is a perfect blend of spices, tender chicken, and fragrant rice, making it a popular choice for special occasions and family gatherings.

Kori Pulao (mangalorean Chicken Pulao)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 2 onions, thinly sliced
  • 1 tomato, chopped
  • 1/4 cup yogurt
  • 2 tbsp ghee
  • 1 cinnamon stick
  • 3-4 cloves
  • 2 cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté until fragrant.
  3. Add the sliced onions and sauté until golden brown.
  4. Stir in the chopped tomato and cook until it turns soft.
  5. Add the chicken pieces and cook until they are no longer pink.
  6. Next, add the turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  7. Pour in the yogurt and mix until well combined.
  8. Add the soaked rice to the pot and gently mix to combine with the chicken and spices.
  9. Pour 4 cups of water into the pot and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes or until the rice is cooked and the chicken is tender.
  10. Sprinkle garam masala over the pulao and garnish with fresh cilantro leaves.
  11. Fluff the pulao with a fork before serving.
