Kori Pulao (mangalorean Chicken Pulao)
Kori Pulao, also known as Mangalorean Chicken Pulao, is a flavorful and aromatic rice dish from the Dakshina Karnataka Cuisine. This dish is a perfect blend of spices, tender chicken, and fragrant rice, making it a popular choice for special occasions and family gatherings.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 2 onions, thinly sliced
- 1 tomato, chopped
- 1/4 cup yogurt
- 2 tbsp ghee
- 1 cinnamon stick
- 3-4 cloves
- 2 cardamom pods
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat ghee over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Stir in the chopped tomato and cook until it turns soft.
- Add the chicken pieces and cook until they are no longer pink.
- Next, add the turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Pour in the yogurt and mix until well combined.
- Add the soaked rice to the pot and gently mix to combine with the chicken and spices.
- Pour 4 cups of water into the pot and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes or until the rice is cooked and the chicken is tender.
- Sprinkle garam masala over the pulao and garnish with fresh cilantro leaves.
- Fluff the pulao with a fork before serving.
