Kori Rotti (spicy Chicken Biryani)
Kori Rotti is a traditional Mangalurean dish that consists of spicy chicken curry served with crispy rice wafers. This flavorful and aromatic dish is a must-try for anyone who loves Indian cuisine.
Ingredients
- 1 kg chicken, cut into pieces
- 2 cups basmati rice
- 1 large onion, finely chopped
- 4 tomatoes, pureed
- 1/2 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup coconut milk
- 10-12 kori rotti (rice wafers)
- Fresh coriander leaves for garnish
- Salt to taste
Instructions
- Marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it sit for 30 minutes.
- Heat oil in a large pot and sauté the chopped onions until golden brown.
- Add the marinated chicken and cook until the chicken is tender.
- Add the tomato puree, garam masala, and coconut milk. Simmer for 10 minutes.
- In a separate pot, cook the basmati rice with some salt until it's fluffy.
- Place a kori rotti on a plate, top it with a serving of rice, and pour the spicy chicken curry over it.
- Garnish with fresh coriander leaves and serve hot.
