Kori Rotti With Ghee Roast (spicy Chicken Ghee Roast)
Kori Rotti with Ghee Roast, also known as Spicy Chicken Ghee Roast, is a popular dish from the Mangalurean cuisine. It is a flavorful and spicy chicken dish that is served with crispy rice wafers called "Rotti".
Ingredients
- 500g chicken, cut into pieces
- 2 onions, finely chopped
- 1/2 cup yogurt
- 2 tbsp ghee
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp cumin seeds
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- Salt to taste
- Fresh coriander leaves for garnish
- Rice wafers (Rotti) for serving
Instructions
- Marinate the chicken pieces with yogurt, turmeric powder, red chili powder, coriander powder, and salt. Let it marinate for 30 minutes.
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the grated ginger and minced garlic, and sauté for a few minutes.
- Add the marinated chicken to the pan and cook on medium heat until the chicken is tender and the masala is well-cooked.
- Garnish with fresh coriander leaves and serve hot with crispy rice wafers (Rotti).
