Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup thick coconut milk
  • 1 large onion, thinly sliced
  • 4-5 green chilies, slit
  • 1 inch ginger, finely chopped
  • 4-5 garlic cloves, minced
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon garam masala
  • 1 teaspoon cumin seeds
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 cup mint leaves, chopped
  • Salt to taste
  • 3 tablespoons ghee
  • 2 tablespoons oil
  • 3 cups water

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee and oil. Add cumin seeds and let them splutter.
  3. Add sliced onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
  4. Add the chicken pieces, turmeric powder, red chili powder, and salt. Cook until the chicken is no longer pink.
  5. Pour in the coconut milk and bring it to a simmer. Add garam masala, coriander leaves, and mint leaves. Cook for 5 minutes.
  6. Meanwhile, in a separate pot, bring 3 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is 70% done. Drain any excess water.
  7. Layer the partially cooked rice over the chicken masala. Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes until the rice is fully cooked and aromatic.
  8. Gently fluff the biryani with a fork and serve hot.
