Kori Sukka Biryani (mangalore Biryani)
Kori Sukka Biryani, also known as Mangalore Biryani, is a flavorful and aromatic dish from the coastal region of Karnataka. This biryani is a perfect blend of spices, tender chicken, and fragrant rice, making it a must-try for biryani lovers.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup thick coconut milk
- 1 large onion, thinly sliced
- 4-5 green chilies, slit
- 1 inch ginger, finely chopped
- 4-5 garlic cloves, minced
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder
- 1 tablespoon garam masala
- 1 teaspoon cumin seeds
- 1/2 cup fresh coriander leaves, chopped
- 1/2 cup mint leaves, chopped
- Salt to taste
- 3 tablespoons ghee
- 2 tablespoons oil
- 3 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat ghee and oil. Add cumin seeds and let them splutter.
- Add sliced onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
- Add the chicken pieces, turmeric powder, red chili powder, and salt. Cook until the chicken is no longer pink.
- Pour in the coconut milk and bring it to a simmer. Add garam masala, coriander leaves, and mint leaves. Cook for 5 minutes.
- Meanwhile, in a separate pot, bring 3 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is 70% done. Drain any excess water.
- Layer the partially cooked rice over the chicken masala. Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes until the rice is fully cooked and aromatic.
- Gently fluff the biryani with a fork and serve hot.
