Korma (chicken Curry With Turmeric)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1/2 cup (120ml) plain yogurt
  • 1/2 cup (120ml) chicken broth
  • 1/4 cup (60g) unsalted cashews, chopped
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, grated ginger, ground turmeric, ground coriander, ground cumin, ground cinnamon, and cayenne pepper to the pan. Cook for 2-3 minutes, stirring constantly, until fragrant.
  3. Add the chicken pieces to the pan and cook until browned on all sides, about 5 minutes.
  4. Stir in the plain yogurt and chicken broth, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. Stir in the chopped cashews and season with salt to taste.
  6. Garnish with fresh cilantro before serving.
