Korma (chicken Curry With Turmeric)
Korma is a classic Afghan dish that features tender chicken in a rich and flavorful curry sauce. This recipe incorporates the warm and earthy flavors of turmeric, creating a comforting and aromatic dish that is perfect for a cozy family meal or special occasion.
Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper (adjust to taste)
- 1/2 cup (120ml) plain yogurt
- 1/2 cup (120ml) chicken broth
- 1/4 cup (60g) unsalted cashews, chopped
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, grated ginger, ground turmeric, ground coriander, ground cumin, ground cinnamon, and cayenne pepper to the pan. Cook for 2-3 minutes, stirring constantly, until fragrant.
- Add the chicken pieces to the pan and cook until browned on all sides, about 5 minutes.
- Stir in the plain yogurt and chicken broth, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in the chopped cashews and season with salt to taste.
- Garnish with fresh cilantro before serving.
