Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 cup plain yogurt
  • 1/2 cup cashews, ground into a paste
  • 1/4 cup vegetable oil
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Cook until fragrant, about 1 minute.
  2. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent, about 5 minutes.
  3. Add the lamb cubes and brown on all sides, about 5 minutes.
  4. Stir in the ground coriander, cumin, turmeric, and cayenne pepper. Cook for 2 minutes.
  5. Add the yogurt and cashew paste. Stir to combine.
  6. Cover the pot and simmer for 45 minutes, or until the lamb is tender.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro before serving.
