Ingredients
- 500g lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 cup plain yogurt
- 1/2 cup cashews, ground into a paste
- 1/4 cup vegetable oil
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Cook until fragrant, about 1 minute.
- Add the onions, garlic, and ginger. Cook until the onions are soft and translucent, about 5 minutes.
- Add the lamb cubes and brown on all sides, about 5 minutes.
- Stir in the ground coriander, cumin, turmeric, and cayenne pepper. Cook for 2 minutes.
- Add the yogurt and cashew paste. Stir to combine.
- Cover the pot and simmer for 45 minutes, or until the lamb is tender.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
