Korokke (ainu-style Salmon And Potato Croquettes)
Korokke is a traditional Ainu dish that features delicious salmon and potatoes. These croquettes are crispy on the outside and soft on the inside, making them a perfect snack or appetizer.
Ingredients
- 1 lb salmon, cooked and flaked
- 2 large potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 eggs
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, mix together the flaked salmon, mashed potatoes, chopped onion, and one beaten egg. Season with salt and pepper.
- Shape the mixture into small patties or croquettes.
- Prepare three shallow dishes - one with flour, one with the remaining beaten egg, and one with panko breadcrumbs.
- Dip each croquette into the flour, then the egg, and finally coat with panko breadcrumbs.
- Heat oil in a pan over medium heat. Fry the croquettes until golden brown on both sides.
- Remove from the pan and place on a paper towel to drain excess oil.
- Serve the korokke hot with your favorite dipping sauce.
