Ingredients

  • 1 lb salmon, cooked and flaked
  • 2 large potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, mix together the flaked salmon, mashed potatoes, chopped onion, and one beaten egg. Season with salt and pepper.
  2. Shape the mixture into small patties or croquettes.
  3. Prepare three shallow dishes - one with flour, one with the remaining beaten egg, and one with panko breadcrumbs.
  4. Dip each croquette into the flour, then the egg, and finally coat with panko breadcrumbs.
  5. Heat oil in a pan over medium heat. Fry the croquettes until golden brown on both sides.
  6. Remove from the pan and place on a paper towel to drain excess oil.
  7. Serve the korokke hot with your favorite dipping sauce.
