Korčula Pasticada (Korčulanska pašticada)
Korčulanska pašticada, also known as Korčula Pasticada, is a traditional Croatian dish that originates from the island of Korčula. This slow-cooked beef dish is rich in flavor and is often served during special occasions and holidays.
Ingredients
- 2 lbs beef chuck, cut into 2-inch cubes
- 1 cup red wine vinegar
- 1 cup water
- 1 cup red wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 4 cloves
- 1 bay leaf
- 1/4 cup prunes
- 1/4 cup dried figs
- 1/4 cup raisins
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, marinate the beef cubes in red wine vinegar for 2 hours.
- After marinating, remove the beef from the vinegar and pat dry with paper towels.
- In a large pot, heat the olive oil over medium heat and brown the beef cubes on all sides. Remove the beef and set aside.
- In the same pot, sauté the onion, carrots, and garlic until softened.
- Return the beef to the pot and add the red wine, water, cloves, bay leaf, prunes, figs, and raisins. Season with salt and pepper.
- Cover the pot and simmer on low heat for 3 hours, or until the beef is tender.
- Once cooked, remove the bay leaf and cloves from the pot.
- Serve the Korčulanska pašticada hot with mashed potatoes or pasta.
