Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 3 large eggs
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 cups cottage cheese
- 1/4 cup sugar
- 1 teaspoon lemon zest
- 2 tablespoons unsalted butter
Instructions
- In a blender, combine the flour, milk, eggs, salt, 1 tablespoon sugar, and vanilla extract. Blend until smooth.
- In a bowl, mix the cottage cheese, 1/4 cup sugar, and lemon zest until well combined.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom.
- Pour 1/4 cup of the batter into the skillet, swirling to evenly coat the bottom.
- Cook for about 2 minutes, then flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.
- Place a spoonful of the cheese filling in the center of each crepe, then fold the sides over the filling and roll up.
- Heat the remaining butter in a skillet and cook the blintzes until golden brown on all sides.
- Serve warm and enjoy!
