Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 3 large eggs
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups cottage cheese
  • 1/4 cup sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons unsalted butter

Instructions

  1. In a blender, combine the flour, milk, eggs, salt, 1 tablespoon sugar, and vanilla extract. Blend until smooth.
  2. In a bowl, mix the cottage cheese, 1/4 cup sugar, and lemon zest until well combined.
  3. Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom.
  4. Pour 1/4 cup of the batter into the skillet, swirling to evenly coat the bottom.
  5. Cook for about 2 minutes, then flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.
  6. Place a spoonful of the cheese filling in the center of each crepe, then fold the sides over the filling and roll up.
  7. Heat the remaining butter in a skillet and cook the blintzes until golden brown on all sides.
  8. Serve warm and enjoy!
