Kosher Grilled Vegetable Salad

Ingredients

  • 1 red bell pepper, seeded and quartered
  • 1 yellow bell pepper, seeded and quartered
  • 1 zucchini, sliced lengthwise
  • 1 yellow squash, sliced lengthwise
  • 1 red onion, cut into thick slices
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1/2 cup fresh basil, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the bell peppers, zucchini, yellow squash, and red onion with olive oil and season with salt and pepper.
