Ingredients
- 4 fillets of white fish (such as cod or halibut)
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1/2 cup pitted green olives
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, sliced
Instructions
- In a large tagine or a deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and cook until softened.
- Add the spices (cumin, coriander, paprika, cinnamon, ginger, turmeric, cayenne pepper) and cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and olives, and bring to a simmer.
- Season the fish fillets with salt and pepper, then gently place them on top of the tomato mixture in the tagine or skillet.
- Arrange the lemon slices on top of the fish.
- Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Sprinkle with chopped cilantro before serving.
