Kosher Moroccan Fish Tagine

Ingredients

  • 4 fillets of white fish (such as cod or halibut)
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup pitted green olives
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced

Instructions

  1. In a large tagine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and cook until softened.
  3. Add the spices (cumin, coriander, paprika, cinnamon, ginger, turmeric, cayenne pepper) and cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and olives, and bring to a simmer.
  5. Season the fish fillets with salt and pepper, then gently place them on top of the tomato mixture in the tagine or skillet.
  6. Arrange the lemon slices on top of the fish.
  7. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
  8. Sprinkle with chopped cilantro before serving.
