Kosher Shakshuka With Spinach
Shakshuka is a popular Middle Eastern and North African dish that features poached eggs in a spicy tomato and pepper sauce. This kosher version adds nutritious spinach to the mix for a flavorful and satisfying meal.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) crushed tomatoes
- 4 cups fresh spinach
- Salt and pepper to taste
- 4 eggs
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes.
- Season with cumin, smoked paprika, and cayenne pepper, stirring to coat the vegetables.
- Pour in the crushed tomatoes and simmer for 10 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 3 minutes.
- Season the sauce with salt and pepper to taste.
- Make 4 wells in the sauce and crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Garnish with fresh parsley and serve hot.
