Ingredients
- 4 large bell peppers, any color
- 1 cup cooked rice
- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef or turkey, onion, and garlic over medium heat until the meat is browned and the onions are tender.
- Stir in the cooked rice, tomato sauce, paprika, cumin, salt, and pepper. Cook for an additional 5 minutes.
- Stuff the bell peppers with the meat and rice mixture and place them in a baking dish.
- Cover the dish with foil and bake for 25-30 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 5-10 minutes to brown the tops of the peppers.
- Serve the stuffed peppers hot and enjoy!
