Kosher Zucchini Noodle Kugel

Ingredients

  • 4 medium zucchinis, spiralized into noodles
  • 1 onion, finely chopped
  • 3 eggs
  • 1/4 cup matzo meal
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the spiralized zucchini noodles in a colander and sprinkle with salt. Let them sit for 10 minutes, then squeeze out any excess moisture.
  3. In a large bowl, beat the eggs and then mix in the chopped onion, matzo meal, olive oil, salt, and pepper.
  4. Add the zucchini noodles to the egg mixture and stir until well combined.
  5. Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
  6. Bake for 45 minutes, or until the kugel is set and the top is golden brown.
  7. Let it cool for a few minutes before slicing and serving.
