Ingredients
- 4 medium zucchinis, spiralized into noodles
- 1 onion, finely chopped
- 3 eggs
- 1/4 cup matzo meal
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Place the spiralized zucchini noodles in a colander and sprinkle with salt. Let them sit for 10 minutes, then squeeze out any excess moisture.
- In a large bowl, beat the eggs and then mix in the chopped onion, matzo meal, olive oil, salt, and pepper.
- Add the zucchini noodles to the egg mixture and stir until well combined.
- Transfer the mixture to a greased 9x13 inch baking dish and spread it out evenly.
- Bake for 45 minutes, or until the kugel is set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
