Kosovan Apricot Jam (Reçel me Kajsi)
Reçel me Kajsi is a traditional Kosovan apricot jam that is bursting with sweet and tangy flavors. This simple yet delicious jam is perfect for spreading on toast, drizzling over yogurt, or using as a filling for pastries.
Ingredients
- 2 kg ripe apricots, pitted and chopped
- 1 kg granulated sugar
- 1 lemon, juiced
Instructions
- In a large pot, combine the chopped apricots, sugar, and lemon juice. Let the mixture sit for 2 hours to allow the apricots to release their juices.
- Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer, stirring occasionally, for about 1 hour or until the jam thickens.
- To test if the jam is ready, place a small amount on a chilled plate. If it wrinkles when pushed with your finger, it's done.
- Once the jam reaches the desired consistency, remove it from the heat and let it cool for 10 minutes.
- Pour the hot jam into sterilized jars and seal them tightly. Allow the jam to cool completely before storing.
