Kosovan Apricot Jam (Reçel me Kajsi)

Ingredients

  • 2 kg ripe apricots, pitted and chopped
  • 1 kg granulated sugar
  • 1 lemon, juiced

Instructions

  1. In a large pot, combine the chopped apricots, sugar, and lemon juice. Let the mixture sit for 2 hours to allow the apricots to release their juices.
  2. Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low and simmer, stirring occasionally, for about 1 hour or until the jam thickens.
  3. To test if the jam is ready, place a small amount on a chilled plate. If it wrinkles when pushed with your finger, it's done.
  4. Once the jam reaches the desired consistency, remove it from the heat and let it cool for 10 minutes.
  5. Pour the hot jam into sterilized jars and seal them tightly. Allow the jam to cool completely before storing.
