Kosovan Pumpkin Soup (Supë me Kungull)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and garlic, and cook until softened.
  3. Add the diced pumpkin, vegetable broth, cinnamon, nutmeg, salt, and pepper.
