Kosovan Pumpkin Soup (Supë me Kungull)
Supë me Kungull, or Kosovan Pumpkin Soup, is a traditional dish that is perfect for the fall season. This hearty and flavorful soup is easy to make and is sure to warm you up on a chilly day.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 carrots, chopped
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and garlic, and cook until softened.
- Add the diced pumpkin, vegetable broth, cinnamon, nutmeg, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the pumpkin is tender.
- Use an immersion blender to puree the soup until smooth.
- Adjust the seasoning if needed, and serve hot.
