Kosovan Shepherd's Pie (Tavë Kosi)

Ingredients

  • 1 1/2 pounds lamb shoulder, cut into chunks
  • 2 tablespoons butter
  • 1/4 cup rice
  • 2 cups plain yogurt
  • 3 eggs
  • 2 tablespoons flour
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the lamb chunks in butter over medium heat.
  3. Once the lamb is browned, remove it from the skillet and set aside.
  4. Add the rice to the skillet and cook for 2-3 minutes, stirring constantly.
  5. Spread the rice in an even layer on the bottom of a greased baking dish.
  6. In a bowl, whisk together the yogurt, eggs, flour, oregano, salt, and pepper.
  7. Pour the yogurt mixture over the lamb in the baking dish.
  8. Bake in the preheated oven for 1 hour, or until the top is golden brown.
  9. Remove from the oven and let it rest for 10 minutes before serving.
