Kosovan Spinach and Cheese Pie (Byrek me Spinaq dhe Djathë)
Byrek me Spinaq dhe Djathë is a traditional Kosovan savory pie made with spinach and cheese filling, wrapped in layers of phyllo dough. This delicious dish is a popular choice for breakfast, brunch, or as a snack in Kosovo.
Ingredients
- 1 pound fresh spinach, washed and chopped
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1/2 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1 package phyllo dough
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the spinach, feta cheese, ricotta cheese, parsley, salt, and pepper.
- Brush a baking dish with olive oil. Layer 5 sheets of phyllo dough in the bottom of the dish, brushing each sheet with olive oil.
- Spread half of the spinach and cheese mixture over the phyllo dough.
- Layer 5 more sheets of phyllo dough on top of the spinach mixture, brushing each sheet with olive oil.
- Spread the remaining spinach and cheese mixture over the phyllo dough.
- Finish by layering the remaining phyllo dough sheets on top, brushing each sheet with olive oil.
- Cut the pie into squares or triangles, then bake for 40-45 minutes, or until the phyllo dough is golden brown and crispy.
- Allow the pie to cool for a few minutes before serving.
